We started with the brussels sprouts as an 'appetizer' and the portion was huge! It arrived in a large pan/bowl that could have fed at least four people. itself was impeccable! Our server, Shae, was the perfect example of what a fine dining server should be! Polite, informed and ready to make excellent suggestions, several which we accepted as we looked over the menu. Tables are socially distanced, the servers and helpers wore masks and gloves and the service. We had a reservation as part of our hotel package and were seated almost immediately upon arrival. What an excellent experience for a casino restaurant, especially a Hard Rock casino. At least it gave me an idea for a really good recipe and I have duplicated it at home with much success. I asked why and she eventually sent the chef out and I gave him great compliments but he said unfortunately they only sell maybe six or eight of them a week and it is not enough to keep the scallops as they are so perishable. It was awesome! I commented to the server how much I love it and she informed me that would only be on the menu for another week or two as they were discontinuing it. Seared scallops over a bed of collard greens and black-eyed peas and a bacon dressing. I saw a dish I never seen before so decided to try it. My wife had the fried chicken and waffle and it was very good. I were to describe it as a cuisine it would be Southern comfort food. It's more casual, but much easier to get into. We're always looking for good restaurants in our area and when we travel and we've had such a fantastic experience at the council oaks steakhouse in the hard Rock we decided to try the rez.
